10th Anniversary Trip!

Coach and I are planning a trip to Europe next summer to celebrate our 10th wedding anniversary. We have built up our skymiles accounts again so we can go business class - woo hoo! The past 2 europe trips i have taken have been in business class and it soo makes a difference. I haven't seen the new flat bed seats so I hope our plane will have them also. We are in the very beginning stages of planning and trying to find someone to watch the kids! My wonderful mother and cousin will be coming for part of the time but I think there will still be one week I need to find someone, any takers? :) Right now, the plan is France, Italy and Greece. Some of our destinations will depend on where there are seats available for using miles. Once we get there, we will just buy a train pass or fly on one of the super cheap airlines there! We want to revisit some of the tiny towns we went to 6 yrs ago. I have been wanting to go to Cinque Terre since my college trip so we are definatly going there!! Can't wait!

Freezer Cooking

Carey and I used to do some freezer cooking every few months - some dishes were yum and some were yuck... This month, I decided to do it a little bit on my own with the help of my mom. She was a great help and cleaned up after me as I went along! That was the best help I could ask for! We used to do all the cooking in one day but this time, I did it over 3 days. But my efforts still paid off! My freezer now has:

2 baked ziti
2 chicken spaghetti
2 sour cream enchiladas
lots of egg free sour cream banana muffins
The following recipes can be found here:

2 Ranch Chicken Wraps
1 Tex-Mex Soup with Homemade Tortilla Chips
1 Pork Sausage Pasta
1 Apricot Chicken Pasta
1 Chilaquiles

Freezer cooking makes for easy meal planning!

Spring Break

Here are the pictures from spring break 0'10 (that is what coach is calling it!). We decided to drive to Louisville for 2 days and it was a nice trip. I hadnt been there for a few yrs - the last time I was there was for a teacher conference so this trip was much more fun! We went to the science museum (ok) and the Louisville Slugger Museum (great). Monkey got a personalized bat and we all got mikni bats at the end of the tour - sweet girl loved her bat! Before the trip, I found a website called AtlasQuest so we did that on the trip down and back. It is kind of nerdy but monkey thought it was really cool. His stamp was a monkey and his 'trail name' was monkey5:)

Easter

We had a great Easter! The easter bunny brought a lot fun stuff including a pearl bracelet for sweet girl! Monkey's favorite present was Toy Story! After church, we went to brunch at the club. Coach's brother, Josh joined us - it was great to see him. After loading pics from easter, I realized we didn't get any pics of him:(
